Work · OS&E design direction

No one will ever read this brief. They will just notice.

Every plate, glass, board and coffee pot for the flagship family buffet at a Mediterranean resort, each one picked for its job. The food promises provenance, so the things it sits on have to keep that promise, every single day.

The premise

Every piece chosen by hand.

A guest will not consciously clock the difference between a plate that was chosen and one that came out of a food service catalogue. They will feel it, the same way they would feel a menu that promised local and quietly served something flown in.

So the direction splits in two. A Foundation range: local, Greek, hardwearing enough to survive seven days of service a week in every kitchen, for everything that repeats identically day after day. And on top, a Personality range: one handpicked line for every dish or counter that stands apart, because those are the signature dishes and the right thing to do is make what they sit on match, and make it magical for whoever is holding it.

"The foundation buffet should look like a beautiful boutique kitchen shop, not a food service environment."

Counter by counter

The right piece for the job, every time.

Swipe through the range. Each counter got its own answer, and the Foundation carries everything in between.

Hammered wooden plates

Foundation

The heavy lifting. Muted colours, natural shapes, the earth tones of the room, so the food stays the hero on every plate that repeats.

Baguettes hanging in wire baskets

The living bakery

Bread on show, hanging and open, wheat to dough to table. Restraint is the key: bread is the star, and if it works the other way round we have probably got it wrong.

Olive wood paddles

The brunch kitchen

Olive wood paddles, glazed terracotta, paper-lined bags. Playful, Sicilian, built to tell the provenance story while it serves.

Terracotta jugs and a small bowl

Eggs and the sea

Oven-going terracotta for shakshuka and mussels, portside fish boxes filled with ice, blue tones for the small plates. Respect for the high-value produce.

Serving bowls with wooden hands

Treats and indulgence

Statement plates, hand-drawn pastry designs, a meringue torched at the table, recycled glass for sundaes. Unapologetically vibrant.

A build-your-own tray of fillings

Children

Build-your-own trays, a holiday mug they decorate and keep, characters to collect, a tree-shaped basket for gathering goodies. Theirs only, never the adults'.

A champagne flute

Glassware

It is never about the glass, and the glass must never let the drink down. Proper cocktail glasses for those who know, toughened quality for the wine.

A linen napkin tied on a stoneware plate

Cutlery and service

Stone, wood, glass, weight and reassurance. A great steak knife, a great butter knife, shining pepper mills, small blooms on every set-up.

Greek coffee brewing in a briki

Specialist pieces

The cork and bark relay tray, handmade bowls nobody else has, and Greek coffee made properly in the briki, in front of the guest. Memories.

A handmade teapot and cups

Locally thrown

Teapots and water jugs from local hands, poured into proper stubby mugs. The quiet reminders of place, always on the table.

A bark-edged wooden tray
Why it matters

The table is the brand, three times a day.

Hundreds of covers a service, seven days a week. Nothing else the brand says gets repeated that often, or held in the hand.

"They will just notice, every single day, that everything on the table belongs there."
